7. Yeah, I was on Keto for awhile and tried almond flour & coconut flour.

I really didn't like them and hubby hated them. Tried several versions and think I may have tried other flours too, but never found anything that would be tasty and somewhat fluffy and didn't have gritty textures. I like wheat pancakes, so can do without super fluffy, but just couldn't tolerate the texture and consistency of the others. I gave up on anything with flour while on Keto for a year. My husband hated Keto, and he's the cook, so I gave it up and a 2 years later we switched to WW. I weigh less now than I did with Keto and my stomach feels better without all that fat.

Peanut butter fudge is a delightful dessert that is very low carb and so is the red pepper dark chocolate fudge - both made with coconut oil and monk fruit or stevia sweetener. Let me know if you want those recipes, both are super simple and delicious. I'd always have to make extra for my son to eat, he loves these too. The hardest part is finding peanut butter without sugar, lol. I ended up just getting the fresh ground peanut butter at the local market, no additives! The dark chocolate fudge is intensely chocolate, with a hint of spice.

Anyway, hoping you can find the mystical perfect recipe for very low carb pancakes, I never could. If you ever perfect it, let us know! I adore pancakes and would love to have a good low carb alternative.
