Herb-baked feta and peppers. This is one of my favorite recipes. It has cherry tomatoes, red onion, and peppers. I'm also adding a few spears of asparagus.
This time I am adding chickpeas, or garbanzos. I found out I can cook them from the dried state in my pressure cooker. Once I do that, I will mix the chickpeas with an herb/olive oil mixture and add them to the roasted feta and peppers. Here's how I roast the peppers:

I love this dish because I can just have little portions of it all evening. Cornbread muffins, toasted, to go with it.
Kombucha: sparkling cider and kombucha, mixed.
Dessert: Angel food cake, Greek yogurt, and super-size blueberries with crystallized ginger.

(40,671 posts)My neighbor across the road puts up an electric fence around his garden. He told me that's the only way he can grow corn. I'm seriously thinking about giving up on growing any type of corn.

(1,760 posts)My first attempt at this dish and it came out great. Besides the brown basmati rice it included chopped onion, minced garlic and ginger, fresh cilantro, cooked Lima beans and peas, golden raisins and raw cashews. I used Pataks seasoning. Cheers!🥂
