What's for Dinner, Fri., Apr. 25, 2025

Ground turkey meatloaf.

Coleslaw with pineapple

Cauliflower puree with Cheddar cheese and chopped parsley.

Cherry berry kombucha.

Dessert: coffee ice cream with chocolate bits in it. I add toasted walnuts and I also microwave miniature marshmallows and add them to the ice cream.

Store bought. I have worked in my yard all afternoon . Planted a flat of lantana and planted my herb pots.

with a baked potato. I could eat this meal 5 nights a week. Now we need to find more morels before the season is over.

Mixed fruit before bedtime.

Your dinner sounds delicious! I'm a huge fan of cruciferous veggies, and I'm definitely going to try your coleslaw and pineapple combo.

I finally tried cooking again. I made small shells with sweet grape tomatoes cooked in EVOO, minced garlic, tomato sauce seasoned with two tablespoons of zesty Italian dressing, lemon juice, salt and pepper. Once the sauce was done, which I cooked with some of the reserved pasta water, I joined sauce, pasta, and some feta cheese. It is delicious and I have enough for dinner tomorrow. Voila!

It took me 90 minutes with two rest breaks and Nollie on my back in her backpack, which she insisted on, so I had to oblige. She loves her backpack. I can't figure out why.

Recently, she's been taking all of her toys out of her toy box (except her baby dog that she sleeps with), and she tips the empty container on its side. She barely fits but gets in with her baby and goes to sleep. She's absolutely hilarious. It's such a sweet blessing.

I'm still recovering from my "episode," but I hope to be able to do more soon.
