What's for Dinner, Fri., Apr. 18, 2025

Red pepper hummus with breadsticks.

Kabobs with marinated steak bits, onion, and green pepper. Cooked on the grill.

Spinach salad with red onion, tangerine slices, and homemade tangerine-sesame vinaigrette.

Dessert: Cakester cookies with cold milk.

2. Shrimp and grits

Grits into boiling water and keep stirring them.

When grits are 80% done add butter, and cheese … sharp Colby and what ever left over cheese
you might have. Stir in butter and cheese. Leave on lowest temperature possible.

Cook 3 or 4 thick slices of bacon….. remove bacon from deep skillet and leave the grease in the
pan …. add one to two pounds of cleaned shrimp (depending on how much grits you cooked)that
has been cut into 2 or 3 pieces into the grease…. As the shrimp starts to turn pink add garlic, green
onions, scallions, and just a little salt.

Pour some of the warm grits into a bread pan about 1/2 way up the pan ..and then add some of the
shrimp mix to the grits …add more of the grits and shrimp mix to the pan top with bacon bits and parsley.

Freeze all the pans you are not going to eat. Eat the shrimp and grits that you want.

When you want more take a frozen pan from the freezer and back it @ 180 F for about 30 to 60
minutes … until it is done.

Very tiny, one dip of Butter Pecan ice cream before bedtime.

Now I been down in the crawlspace all day doing plumbing work. My knees are killing me and I still have a plumbing problem. Loretta's washing machine is not draining right and water backs up in the spin cycle. I don't have any problems with the sinks draining or toilet flushing, just the washing machine. They all go into the same underground septic tank, so I'm puzzled. I may have to dig up the backyard and look at the septic tank. I ran a plumpers snake, but I have no idea if the snake made it to the septic tank. They say things happen in threes. My brother died two weeks ago, garage door and now this. Hopefully things straighten out here after this.

If you can access the innards and check the hoses and connection points, you might be able to clear a growing clog. Maybe run a snake through it?

backs up in the drain pipe and it squirts out where the drain hose goes into the pvc pipe behind the washer. The pvc pipe goes into the crawlspace and then out to the septic tank. I will check the washer before digging up my backyard. Thanks for the suggestion.

Then it’s just the drain pipe that’s clogged. Hopefully, that’ll be an easier fix than having to dismantle the washer. I know you can get a snake in various lengths. There are hand-cranked ones for about $30 for a 30-footer or if you have a drill, about $50 will get you a 50-footer that would be much faster and easier. Cheaper than a plumber, and handy to have for drains in general.

Naan pizza ~
Naan topped with homemade Thousand Island dressing, Vermont Cabot cheese, sautéed red onions, summer squash, orange peppers, cherry tomatoes and shredded Vermont McKenzie ham.

Water with a couple shots of Bragg raw apple cider vinegar

Once again dessert is a problem. Nothing good in the pantry and cookie jar is empty.
