What's for Dinner, Wed., April 2, 2025

Soft shell fish tacos.

I'm using Mollie Katzen's recipe for "Salsa Yucateo," which is in her Moosewood Cookbook. It has green olives and pimientos in it, as well as ground achiote seed. Coriander seed is also ground into the sauce.

Kombucha: cherry berry.

Dessert: Lemon Greek yogurt with Cotton Candy green grapes. Hot tea (it's cool here today--41 degrees.)

My main meal today. Work tonight
Before leaving for work I made a smoothie with bananas foster yogurt, banana, coconut crème, coconut milk and ice. Should tide me over until a snack later.

Browned up some TJ's veg gyoza and then slathered on some spicy Szechuan sauce. Crunchy, sticky, and maybe the best dinner of the week.
